This morning, we carefully coated 954 pounds of ribs with our top-secret rub, locking in layers of bold, irresistible flavor. Now, they rest for 18 hours, letting the magic happen before tomorrow's transformation. They'll be slow-smoked for 3 ½ hours over fragrant applewood, infusing every bite with deep, smoky richness.
